Hubby had a free coupon deal for some Hormel mac & cheese. I told him I would eat it on a long run day cuz it was 440 calories. It wasn't as good as 440 calories should be though. The eggplant cutlets were from our garden and delicious!
A repeat of last night's photo cuz I know this is what I am going to have and I want to post this before I settle in to watch a movie, "The Second Best Exotic Marigold Hotel".
The eggplant looks really good! I've not tried breading it like a cutlet before. I've gotten sort of addicted to the Gardein veggie "chicken" things. (don't even try the orange chicken ones unless you want to be opening a package up at 10 o clock at night after being good all day).

ReplyDeleteyeah, my dad likes bought mac'n'cheese, but i reckon they are never as good as home made - plus tend be full of unwanteds... oohhhh, I want to get that dvd... have the first one. Fabby story!
Forgot to say i made the scones for dad and didn't get a piccie coz we took down to Uncle A's and the were scoffed pronto!!! Thanks for the recipe, more will be made &*>
